Blue Fin, a Japanese dining and sushi restaurant, has received high marks from Laurent Pillard, executive chef at Fleur and Burger Bar in Mandalay Bay: “It’s very small, but you see a lot of locals there and always the same people,” he said in an interview with the Las Vegas Weekly. “The chef is someone who used to work for me, and he’s doing a great job. I’m kind of his guinea pig when he has something new on the menu.”
